Savory Patties Recipe: Puso ng Saging, Coconut Flour

Credit goes to our wonderful cook, Ate Shirley, for this recipe! She surprised me by making these on her own, experimenting with our coconut flour, and I was delighted by how meaty it tasted. The sauce is reminiscent of adobo-- Filipino cuisine is known for having scrumptious sauces. :)

The coconut flour in this recipe helps make the patties taste "toasty".





Ingredients:

Patties:
1 egg, beaten
1/2 puso ng saging (banana blossom), minced
1 tbsp + 1tsp coconut flour
1 tbsp onion, minced
1 tbsp garlic, minced
freshly ground black pepper, to taste

Sauce:
1 tbsp soy sauce
1 tbsp coconut vinegar
2 tsp coconut sugar

Use butter for cooking.






In a bowl, mix together all the ingredients for the patties.
In a separate bowl, mix together the ingredients for the sauce.
Save one or two spoonfuls of the sauce to drizzle on the cooked patties later,
and mix the rest of the sauce into the patties' batter.




Scoop small patties (about 3 inches in diameter) onto a pre-heated pan with butter.
Cover the pan for a few minutes, then flip the patties over.
Continue until done. Be careful not to overcook. If it tastes dry, it's overcooked.
Drizzle the finished patties with the sauce you saved earlier.
Enjoy! These are great by themselves, with rice, or in a burger.
