Bacon Pancakes Using Coconut Flour

What better to go with paleo pancakes, than bacon? :)
Use our coconut flour pancake batter (recipe here) for this fun, salty, sweet treat!
Cut bacon strips into 2-3 inch piece for easy flipping.
Cook bacon strips in butter.
Pour pancake batter on top of bacon strips, then flip 'em.
Pour more pancake on top of bacon strips, then flip 'em again.
Pancake batter absorbs butter and bacon grease, yum!
Be careful not to overcook the pancake - if it turns out dry it's overcooked.
